Deiro Garcia is one of the most innovative coffee producers in the region of Huila, in southern Colombia. He has a farm in Pitalito and being a big fan of Harry Potter he named his farm Lord Voldemort.

It's not just the name that's crazy, but also his approach to coffee production and processing. Deiro has been experimenting with fermentation for 3 years now, has done many tests with some outstanding results and developed his own process for processing his coffee on his farm. He took courses in microbiology and learned that certain bacteria and yeast strains help produce different coffee profiles. So he started reproducing his own bacteria and yeast using various fruit and vegetable enzymes.

 

The washed process for this pink bourbon is a traditional fermentation in cement tanks, preceded by a 24-hour fermentation of the cherries in the holding tank.
