This lot from the latest Cup of Excellence in El Salvador (Winner #5) is a limited edition coffee, since we only bought 60kg in the auction. The Cup of Excellence is the most prestigious coffee competition in the world. Each year, the best coffees of a country are selected through a multi-stage, strict tasting process carried out by national and international juries. The winning coffees are then sold at an international auction — thus, the Cup of Excellence gives small farms and producers a stage to showcase their work, build new partnerships, and receive fair prices for their exceptional quality. This year, we had the honor of being part of the international jury ourselves and bid for this lot we liked very much in the auction.

It comes from Finca Miramar, in the region of Quezaltepeque. Fernando Felipe Alfaro Castaneda, a producer with decades of experience in coffee growing and processing, acquires from his father in law Finca Miramar, located in the San Salvador Volcano at an average altitude of 1,700 meters with the goal of establishing a productive farm with exotic varieties. The farm has an area of 15,5 has and was planted with the traditional Arabigo and Bourbon varieties. Felipe started to completely renovate it and planted varietals like Geisha, Kenya SL 28, Pacamara, Pink Bourbon and Red Bourbon.
The coffees are processed mainly but they also started doing some Anaerobic natural fermentation process experiments. 

This COE Lot is comprised of the varietals Typica and Bourbon, which provide for a full, rich mouthfeel and processed semi-washed or honey, leaving some of the muscilage on the beans during drying, which brings out sweet notes of dark chocolate and caramel, delicate floral notes, and elegant fruitiness in the form of dark, juicy fruits (cherry, grape) and tropical fruits
