This extraordinary bean is a coffee variety from Ethiopia, called Amaro Gayo. A few years ago, some green beans made their way from Ethiopia to Panama and found their new home at Finca Hartmann. Since the Ethiopian name is protected, the coffee was named after the head of the Hartmann family, Don Chicho, who died a few years ago, and since then has been producing a very unusual cup as Chicho Gallo, reminiscent of geisha, but with a stronger body and more fruity than floral - especially stone fruit, orange, grapefruit.
